My Very Favorite Quesadillas image

I love these! Obviously, I don't make 4 at a time - more like 12, but you get the idea, the more tortillas, the more ingredients. I like to top these with Mock Sour Cream, which I have posted, and some fresh, chopped tomato.(and maybe a little of that leftover cilantro...)

Time 40m

Yield 2 serving(s)

Number Of Ingredients 4

1 1/3 cups shredded muenster cheese
1/4 cup chopped green onion
4 tablespoons canned diced green chiles
fresh cilantro, chopped

Steps:

  • Arrange 1/3 cup of cheese, 1 tbl. green onion, 1 teaspoons chopped chilies, and 1 tbl. of cilantro on one half of each tortilla. Fold tortilla over filling.
  • Spray a large skillet with cooking spray, and set heat to high. Add quesadillas and cook and flip till tortilla is browned and cheese has melted
  • If you prefer, you can also brush the tortillas with oil and bake in the broiler until cheese melts, turning once.

I'm not a huge fan of quesadillas, but these were pretty good. The cheese was melted perfectly and the flavors were well-balanced.

Quesadillas are my favorite food, and this recipe did not disappoint! They were crispy on the outside and gooey on the inside, just the way I like them.

I'm not sure what went wrong, but my quesadillas fell apart when I tried to flip them. Maybe I didn't cook them long enough.

I followed the recipe exactly, but my quesadillas didn't turn out as good as the picture. They were kind of soggy.

These quesadillas were a bit bland. I think I'll add some more spices next time.

I tried making these quesadillas with whole wheat tortillas, but they didn't turn out as well. The tortillas were too thick and chewy.

These quesadillas were a bit too cheesy for my taste, but my husband loved them. I'll probably make them again with less cheese next time.
