My Version of Tomatillo Sauce image

This sauce is so versatile -- it can be used on enchiladas, tacos or used as a dip with chips.

4 tomatillos, washed and peeled
1 chipotle pepper, canned packed in adobo sauce (or pepper of your choice)
1 medium onion, cut into a rough chop
3 cloves garlic
1 tsp sugar or honey (or to taste)
1/4 bunch cilantro, chopped
salt & pepper to taste

Steps:

  • 1. Place the tomatillos, chipotle and onions in water and bring to a boil for 5 minutes until soft and tender.
  • 2. Drain water and place all ingredients in a blender. Blend well and then adjust seasonings.
  • 3. This sauce can be used on enchiladas, tacos or served with chips
