My Delicious Fruitcake Cookies image

I found this recipe in a very old publication. I did not have all the ingredients called for, so I improvised and it turned out very pretty and tasted really good! As I am not a fan of fruitcake I was surprised how good these cookies turned out.

1/2 c butter, softened
3/4 c sugar
1 egg
1-1/4 c all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 c chopped, pitted dates
1-1/2 c extra-fancy fruitcake fruit mix, chopped
1-1/2 c coarsley chopped walnuts, toasted

Steps:

  • 1. Cream butter and sugar. Add egg, mix well. Combine flour, baking soda, salt and cinnamon; gradually add to the creamed mixture and mix well.
  • 2. Fold in fruits and nuts. Drop by rounded teaspoonfuls 2 inches apart on greased baking sheets.
  • 3. Bake at 375 degrees for 8-10 minutes or until lightly browned. Cool in wire racks.
