Mushroom Barley and Collards Soup image

This is a recipe I found when DH kept hounding me for a mushroom soup one winter! It is a great way to get some greens and whole grains in, even in the winter if you use frozen greens. I'm sure any could sub for the collards, and you could vary the taste (ie make it zippier with mustard greens, etc.). I hope you enjoy it!

I'm not sure what I did wrong, but my soup came out really watery. I think I might have added too much broth.

This soup is way too time-consuming to make. I spent over an hour in the kitchen and it wasn't worth it.

I followed the recipe exactly, but my soup turned out too salty. I think I'll use less salt next time.

This soup is a bit bland for my taste. I added some extra salt and pepper and it was much better.

I'm not usually a fan of barley soups, but this one changed my mind. The barley was cooked perfectly and added a nice texture to the soup.

This soup was a hit at my dinner party! The flavors of the mushrooms, barley, and collards came together perfectly. I especially loved the addition of the smoked paprika, which gave the soup a nice depth of flavor.
