Steps:
- Slice the onion and layer it across the bottom of a shallow baking dish. Do the same with the zucchini and then the tomatoes. Drizzle the layers with olive oil and season with salt, pepper, and oregano. Slash the chicken breasts at even intervals. Slice the mozzarella into quarter-inch thick pieces and insert into the chicken. Lay the breasts on top of the vegetables and top with chopped basil. Bake in preheated oven at 400 for approximately 25-30 minutes.
