"My husband's family is Irish. Wanting to impress my future mother-in-law, I baked this bread and took it along with me when I met her the first time. Needless to say, it worked!" -Padmini Roy-Dixon, Columbus, Ohio

Yield 1 loaf (16 slices).

Number Of Ingredients 11

3/4 cup raisins
1 cup boiling water
2 cups all-purpose flour
1 cup whole wheat flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 large egg
2 cups buttermilk
1/4 cup butter, melted

Steps:

  • Place raisins in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain and pat dry., In a large bowl, combine the flours, sugar, baking powder, baking soda and salt. In a small bowl, whisk the egg, buttermilk and butter. Stir into dry ingredients just until moistened. Fold in raisins., Transfer to a 9x5-in. loaf pan coated with cooking spray. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
