Moroccan Chicken Salad for One image

Great for left over chicken. If you don't have dates...try dried apricots or what ever you have handy :0

Number Of Ingredients 7

4 Tbsp plain greek yogurt
1/2 tsp honey
1/8 tsp ground cumin
1/8 tsp ground cinnamon
3 oz grilled, or baked chicken, chopped
1/2 c shredded carrots
2 Tbsp chopped dates

Steps:

  • 1. Combine in a small bowl first 5 ingredients (through cinnamon)stir well till blended.
  • 2. Combine chicken, carrot, and dates in a bowl. Add dressing; toss to coat.
  • 3. Good as is or served in a pita.
