Morning Sunrise Smoothie image

Fruit and vegetable smoothies are popular breakfast foods for good reason: They are fast, easy, nutritious, delicious, and portable! This one is like a liquid sunset in a glass. At lunch, a delicately poached egg turns a green bean salad into a silky indulgence thanks to the runny yolk, which fortifies the dressing. You won't miss red meat for dinner when there are meaty grilled portobellos around. These are served atop comforting mashed potatoes.

Number Of Ingredients 7

2 medium carrots, diced
1 cup fresh or frozen pineapple chunks
2-inch piece fresh ginger, peeled and roughly chopped
1 tablespoon coconut oil
1 teaspoon ground turmeric
Juice of 1 lemon
1 cup water

Steps:

  • In a blender, combine all of the ingredients and process until smooth.
