This potato salad is a great way to use up leftover potatoes. I always have leftover potatoes after I make mashed potatoes or roasted potatoes, and this is a great way to use them up. I also love that this potato salad is so easy to make. I can have

I thought the potatoes were a bit overcooked. I would recommend cooking them for a shorter amount of time.

I love the creamy texture of this potato salad. It's so smooth and rich. I also appreciate that this recipe doesn't use any mayonnaise. I'm not a big fan of mayonnaise, so this potato salad is a great option for me.

This potato salad is a great make-ahead dish. I love that I can make it the day before a party or potluck and it still tastes just as good. I also appreciate that this recipe is so versatile. You can add or subtract ingredients to suit your own taste

I thought this potato salad was a bit too bland. I added some diced onion and celery to it, and that helped improve the flavor. I also think it would be better if you used a different type of mustard. I used yellow mustard, and I think a Dijon mustar
