Steps:
- 1. Cook chicken in water seasoned with onion and celery until tender - save broth. When cool, debone and cut into bite size pieces. Set aside.
- 2. To make dumplings, melt butter in the boiling water. Add salt to sifted flour. Add flour mixture to boiling water. Stir and cook until mixture leaves the side of the pan - doesn't take long. Cool slightly and then add eggs one at a time - stir well after each addition.
- 3. Pat dough out in thirds with floured hands and roll out with a rolling pin. Cut dough into strips, about 1-2 inches.
- 4. Meanwhile remove the onion and celery from the broth and chop - return to broth. Next, make a slurry with the 1/4-1/2 cup flour and 1/2 cup water in a jar with a tight-fitting lid. Shake well until all lumps disappear. Pour into hot broth, stirring constantly until thickened slightly. Add chicken into hot broth.
- 5. Drop dough strips into boiling broth and cook until done -- doesn't take long.
- 6. Sprinkle with parsley (optional) and serve.
