Mom-Mom's No-Bake Cherry Cheese Pie/Tarts image

My Mom made this many times when I was growing up, for both holiday family events and church functions. It's still one of my favorites and so easy to make! I could eat the filling right out of the blender. Ha!

Time 30m

Number Of Ingredients 5

8 oz whipped cream cheese (make sure it's 'whipped')
1/3 c lemon juice
1 can(s) sweetened, condensed milk
1 graham cracker pie crust (or 1 doz. graham cracker tart shells)
1 can(s) cherry pie filling (or strawberry works nice too)

Steps:

  • 1. In a blender, combine the first 3 ingredients. Blend until smooth.
  • 2. Refrain from eating the filling right out of the blender. ;)
  • 3. Pour/spoon filling into pie (or tart) crust(s).
  • 4. Save clear top from pie crust package. Flipped over, it makes a great lid when you chill it in the fridge.
  • 5. Chill 20 minutes in the freezer.
  • 6. Top with pie filling.
  • 7. Place clear lid over top and chill in the refrigerator until ready to serve.

I'm not sure what I did wrong, but my filling turned out runny. I think I might have added too much milk.

These tarts are a bit too sweet for my taste, but I think they would be perfect for kids.

I had some trouble finding graham cracker crumbs, so I used crushed vanilla wafers instead. They worked great!

The crust is a little too crumbly for my taste, but the filling is delicious.

These tarts are a great way to use up leftover cherries. I always have a few extra cherries after I make a cherry pie, and these tarts are the perfect way to use them up.

I'm not a huge fan of cherry pie, but these tarts are amazing. The cheese filling really balances out the sweetness of the cherries.
