MOCK POPEYe'S RED BEANS AND RICE image

ok i love popeye's red beans and rice. but at almost $5 for a large and not being able to put this truck just anywhere. I have come up with this. try it and tell me what you think.

Number Of Ingredients 10

1/4 tsp cumin
1/2 tsp chili powder
1 tsp garlic powder
1/2 tsp salt
1/4 tsp white pepper
1/4 tsp cayenne pepper
1 can(s) large light kidney beans 16oz(do not drain)
1 can(s) seasoned pinto beans 16oz(do not drain)
2 can(s) refried beans
2 c instant rice (cook according to directions)

Steps:

  • 1. in large sauce pan, heat all the beans but do not boil. when well heated with masher gently mash kidney and whole pintos lightly do not over mash.
  • 2. stir in one at a time, of all the spices, mixing well with wire wisk after each addition.
  • 3. in six small cups fill 1/2 way with bean mixture and top with 1/4 cup of rice.serve hot.
  • 4. this will make for a mildly spicy red bean and rice cup. if you like it more spicy add a little more cayenne pepper or a shot of hot sauce.
