Mock Pecan Pie image

This recipe was developed for persons with nut allergies that would still love to have the taste of that good ol' southern pecan pie without the pecans. Even those I have served this too do not have any idea that the pecans are missing from this pie even my southern son-in-law. So, let's not tell!

Number Of Ingredients 8

1/4 c butter or margarine
1/2 c sugar
1 c dark corn syrup
1/4 tsp salt
3 eggs, well beaten
1/2 c coconut
1/2 c quick cooking oatmeal
1 unbaked 9" pie crust

Steps:

  • 1. Cream butter to soften. Add sugar gradually and cream till fluffy. Add syrup and salt. Beat well. Add eggs, one at a time, beating after each addition. Stir in coconut and oatmeal. Pour into pie shell. Bake at 350 for 50 minutes or until knife comes out clean. Cool before serving.
