1 tomato
1 1/2 tablespoons fresh lemon juice
3 tablespoons extra-virgin
olive oil
1/3 cup packed fresh mint leaves
1/4 cup packed fresh flat-leafed parsley leaves
3 medium zucchini (about 1 pound total)

This salad was a refreshing and flavorful side dish to my grilled chicken. The mint and lemon added a nice brightness, and the zucchini was perfectly tender-crisp.
