Mini Herbed Cucumber Canapes image

I found this recipe in a book called "THE BEST OF COUNTRY COOKING" published by "Taste of Home". I needed something quick to whip up for a get together with friends. Quick prep the day before and quick prep the day of the get together. They were a hit; none left to be seen! (prep time does not included 24 hour refrigeration.)

These canapés were a bit bland. I think they would have been better with a more flavorful herb, like basil or mint.

The cream cheese was too thick and made the canapés difficult to eat.

These canapés are a bit too salty for my taste.

I'm not a fan of dill, so I used parsley instead. The canapés were still delicious.

I'm not a big fan of cucumbers, but I loved these canapés. The herbs and cream cheese really balance out the cucumber flavor.
