Steps:
- 1. Preheat oven to 350 degrees. Grease a 9" x 13" baking pan and set aside.
- 2. In a large mixer bowl, cream the butter and sugar until completely mixed, add the vanilla and orange zest. Add the eggs, one at a time, beating well after each addition. In a small bowl, combine the flour and baking powder and then slowly add this to the butter mixture.
- 3. Spread 2/3 of the batter into the prepared pan. Spread the mincemeat on top of the batter. Drop the remaining batter by spoonfuls onto the mincemeat. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- 4. Combine the powdered sugar and orange juice to make a glaze. Drizzle over the warm cake and serve.
