Million Dollar Rice Salad image

This was first called "Million Dollar Rice Salad" and won first prize in a Texas Farm Bureau contest- where all the recipes had to contain rice and this was the prize winner and the only dessert salad entered. Number Of Ingredients 9

8 oz cream cheese, softened
1 1/2 Tbsp granulated sugar
1 Tbsp mayonnaise
2 c cooked rice, cooled
12 large maraschino cherries, cut in half
20 oz can pineapple tidbits, drained
10 oz pkg. mini marshmallows, white or pastels
8 oz tub thawed cool whip
1 c chopped pecans, optional

Steps:

  • 1. Combine cream cheese, sugar and mayonnaise and whip until smooth. Fold in rice, cherries, pineapple and marshmallows and blend gently. Fold in Cool Whip and pecan if desired.
  • 2. Note: Original recipe calls for whipped Dream Whip according to package directions. I prefer to us the Cool Whip.
