My husband suffered a mild stroke on the 4th of Nov and our son and his wife came to help me out while he was in the hospital. She made this for our son every morning. It definitely couldn't be more simple.

Steps:
- 1. Butter or spray with non-stick spray a microwave safe (glass) bowl. Break two eggs into the bowl and beat slightly. Cover with a paper towel and microwave on high for 1 minute.
- 2. Remove from microwave and put cheese, ham, or bacon, or sausage patty on top of eggs, cover and microwave for 10 seconds more. Cool slightly and place on a bagel, toast, a biscuit or whatever and enjoy!
