Microwave Artichoke Hearts image

Took a microwave class years ago to learn how to actually cook in a microwave insted of just re-heat everything. Found and created some great recipes. Here is one that is an easy and tasty appetizer.

2 jar(s) marinated artichoke hearts
1 slice brown onion
4 large eggs
1/4 c fine dried bread crumbs
1/4 tsp salt
1/8 tsp pepper
1/8 tsp oregano, dried
1/8 tsp tabasco sauce
1/2 lb sharp cheddar cheese, grated
2 Tbsp minced parsley

Steps:

  • 1. Drain marinade from 1 jar artichokes into 8x10 inch baking dish. Drain another jar and keep marinade for another purpose(future). Chop all artichoke hearts, set aside. Add brown onion (finely chopped) to dish and cook, uncovered, in microwave for 4 minutes until onion is limp, stirring once or twice.
  • 2. In a bowl, beat eggs slightly. Add crumbs, salt, pepper, oregano, and Tabasco. stir in cheese, parsley and artichoke hearts. Pour mixture into baking dish with onions. Cook, uncovered on HIGH for 10-12 minutes or till center is set when lightly touched. Turn dish 2 times while cooking. Let cool for 10 minutes. Cut into 1 inch squares. Serve warm at room temperature.
