Mexican Casserole image

Fast and easy Don't forget that you'll need the ingredients for the rice as on box.

1 pkg rice-a-roni spanish rice
1 bag(s) (small) corn chips, divided
1 pkg tamaes, (any kind, canned or frozen)
1 can(s) chili (with or without beans)
1 pkg shredded sharp cheddar cheese
black olives, optional
you can add refried beans, jalapeno peppers, and hot sauce.

Steps:

  • 1. Cook rice according to package directions: set aside. Coat a 9x11 inch casserole dish with cooking spray. Layer corn chips on the bottom of the dish. Then pour rice over the chips.
  • 2. Add a layer of tamales over the rice. Pour the chili over the tamales. Add another layer of corn chips.
  • 3. Bake casserole for 20 minutes at 400 degrees. Take casserole out of the oven and sprinkle cheese on tip; the cook for another 5 minutes
