MEXICAN CANNOLI image

Yield makes 36-42

Number Of Ingredients 8

Large package of 10-inch flour tortillas
1 cup sugar
3 tablespoons cinnamon
1 large container Cool Whip
1 8-ounce package cream cheese
2 1-ounce packages instant vanilla pudding
Chocolate syrup
non-stick cooking spray

Steps:

  • Pre-heat oven to 350 degrees.Mix cinnamon and sugar together. Cut each tortilla into three triangles. One at a time, spray each side of the tortillas with cooking spray, and dredge in sugar mixture. Roll triangles into cannoli shape, and place each cannoli into a muffin tray. Bake for 10 minutes, then remove from tray and allow to cool completely. Meanwhile, allow cool whip and cream cheese to come to room temperature. Mix cool whip, cream cheese, and both packages of pudding together with electric mixer until smooth. When shells are cool, fill each shell using either a spoon or piping bag. Store in refrigerator. Just before serving, drizzle with chocolate sauce.
