Three items are all you need for this cool creation sent in by Tina Meekins. "It's particularly yummy on hot days," notes the Port Orchard, Washington mom. No granola in the pantry? Top off individual servings with chopped nuts or toasted coconut.

1 medium cantaloupe, cut into 4 wedges
1 pint fat-free sugar-free vanilla ice cream
4 tablespoons reduced-fat granola cereal without raisins

Steps:

  • Place cantaloupe wedges in individual bowls. Top each with a scoop of ice cream and 1 tablespoon granola. Serve immediately.
