The recipe I found for this dressing which is all over the web isn't even close, so I went to the kitchen and started tinkering while the memory of the delicious chef salad I had at Mellow Mushroom last night is fresh in my mind. Here's my best effort.

This dressing is a bit too acidic for my taste. I think I'll try adding a little bit of sugar or honey next time.

I'm not a huge fan of vinegar-based dressings, but this one is surprisingly good. The sweetness of the honey balances out the tanginess of the vinegar perfectly.
