Mediterranean Quick Pizza is a 2013 Bisquick Family Favorites Recipe Contest award-winning recipe developed Elaine Mason of Oconomowoc, 2nd Place, Wisconsin State Fair (Milwaukee, WI).

1 1/2 cups Original Bisquick™ mix
1/3 cup very hot water
1 tablespoon extra-virgin olive oil
1/2 cup red wine vinegar
3 cloves garlic, finely chopped
1 tablespoon dried basil leaves
1 teaspoon dried oregano leaves
3 tablespoons fresh lemon juice
3/4 cup extra-virgin olive oil
2 packages (8 oz each) cream cheese, softened
1/2 cup diced sun-dried tomatoes in oil (from 8-oz can)
1 cup chopped tomato
1 cup chopped cucumber
1/4 cup chopped red onion
1/4 cup sliced pitted kalamata olives
1 cup chopped fresh spinach
1/2 cup crumbled feta cheese

Steps:

  • Heat oven to 400°F. Spray 12-inch pizza pan with cooking spray. In medium bowl, stir Crust ingredients until soft dough forms. Press dough in bottom of pizza pan, forming a crust at edge of pan. With fork, prick to prevent crust from puffing.
  • Bake 12 to 16 minutes or until crust is golden. Cool 10 minutes. Meanwhile, in medium bowl, beat Greek Vinaigrette Dressing ingredients with whisk until well blended. Set aside.
  • In medium bowl, mix cream cheese and sun-dried tomatoes. Spread mixture on pizza crust. Top with tomato, cucumber, onion, olives and spinach. In small bowl, mix together 1/4 cup of the dressing and the feta cheese; spoon over pizza. (Cover and refrigerate remaining dressing for another use.)

Overall, I thought this recipe was just okay. It wasn't bad, but it wasn't anything special either.

The crust was a bit soggy. I think I'll try baking it for a few minutes longer next time.
