Steps:
- 1. Heat olive oil in skillet over medium-high heat. Add onion, carrot, oregano and garlic. Saute 2 minutes. Cool.
- 2. Combine onion mixture, 1 cup tomato sauce, ground beef, saltines and egg. Mix well.
- 3. Spray 12 muffin cups with cooking spray. Spoon in meat mixture.
- 4. Top each 'muffin' with 2 teaspoons tomato sauce.
- 5. Bake at 350 degrees for 25-30 minutes.
- 6. Enjoy!
