Mason Jar Instant Noodle Soup image

Easy meal-prep option. Tastes a bit like pho!

1 cooked chicken breast, shredded
1 teaspoon soy sauce
1 tablespoon sriracha sauce
½ teaspoon lime juice
2 cubes chicken bouillon
2 cups sliced broccoli stems
2 tablespoons sliced carrot
2 tablespoons sliced yellow bell pepper
2 tablespoons sliced green onion
½ red chile pepper, thinly sliced
½ (8 ounce) package uncooked bean threads (cellophane noodles)
2 sprigs fresh cilantro, or to taste
2 sprigs Thai basil, or to taste

Steps:

  • Combine chicken, soy sauce, sriracha, and lime juice in quart-sized canning jar. Add bouillon cubes. Layer broccoli, carrot, bell pepper, green onion, and red chile on top. Add noodles, cilantro, and basil. Cover and refrigerate until ready to serve.
  • Pour boiling water into the jar until 2/3-full. Microwave, uncovered, for 1 to 2 minutes. Stir.
