Time 15m

Yield 4 servings

Number Of Ingredients 13

3 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
3 tablespoons orange juice
1 tablespoon honey
Pinch garlic powder
Pinch kosher salt
Pinch freshly ground black pepper
One 14-ounce bag multicolor coleslaw mix with carrots
1 cup shredded kale
1/2 cup sliced almonds
1/2 cup crispy onions (or you can substitute raw onions)
3 clementines, peeled and separated

Steps:

  • For the vinaigrette: Combine the apple cider vinegar and mustard in a small bowl, then slowly whisk in the olive oil (this step is called emulsifying). Make sure it's fully incorporated. Whisk in the orange juice, honey, garlic powder, salt and pepper, then set aside or refrigerate.
  • For the salad: Combine the coleslaw mix, kale, almonds, onions and clementines in a large salad bowl. Toss with the vinaigrette and serve.

This salad is pretty good. I would make it again, but I might change a few things.

This salad is good, but it's not great. I've had better.

This salad is okay, but it's not anything special. I probably wouldn't make it again.

This salad is a waste of time and ingredients. I would not recommend it to anyone.

I followed the recipe exactly, but my salad didn't turn out as good as the picture. I'm not sure what I did wrong.

This salad is not as good as I expected it to be. The flavors just didn't come together for me.

This salad is a bit too bland for me. I would add some more spices or herbs to give it more flavor.

The dressing is a bit too sweet for my taste. I would probably use less honey next time.

I'm not a huge fan of avocado, but I really enjoyed it in this salad. It added a nice creamy texture and helped to balance out the acidity of the citrus dressing.

I love that this salad is so versatile. You can add or remove ingredients to suit your taste. I like to add a bit of crumbled feta cheese for an extra salty flavor.

The citrus dressing is the star of this salad. It's light and refreshing, and it really brings out the flavors of the other ingredients.

I love the crunch of the nuts in this salad. They add a nice textural contrast to the soft chicken and avocado.

This salad is a great way to use up leftover chicken. I always have a few pieces left over after dinner, and this is a great way to use them up.

I'm not usually a fan of salads, but this one is an exception. The combination of flavors and textures is just perfect.

This salad was a hit at my last dinner party! The combination of sweet citrus, crunchy nuts, and creamy avocado was divine. I'll definitely be making it again.
