2 lbs large ripe nectarines
2 lbs white sugar
1/4 cup water
1/8 teaspoon vanilla extract
1/4 cup brandy
11/2 tablespoons lemon juice

Steps:

  • 1. Peel and seed nectarines, and cut into large chunks. Add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft.
  • 2. Keep a close watch toward the end and 5 minutes before removing from the heat, stir in vanilla, lemon juice and cognac and mix well.
  • 3. Place in sterilized jars and allow to cool completely before sealing.
