MARINATED FOUR-BEAN SALAD image

1 1 lb. can garbanzo beans, drained
1 1 lb. can kidney beans, drained
1 1 lb. can Italian-style green beans, drained
1 1 lb. can wax beans, drained
3 tablespoons sugar
1/2 cup white-wine vinegar
1/2 cup olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon dry mustard
1/2 teaspoon dried leaf basil
1 small red onion, sliced, separated into rings or chopped
3 tablespoons chopped fresh parsley

Steps:

  • In a large bowl, mix together 4 kinds of beans. In a small bowl, combine sugar and vinegar. Let stand until dissolved. Stir in oil, salt, pepper, mustard and basil. Pour vinegar mixture over beans. Mix thoroughly. Cover and refrigerate several hours. To serve, add onion and parsley. Mix lightly.
