MANGO TOMATO SALSA image

1/2 red onion, diced
2 ripe mangoes, diced
2 ripe tomatoes, diced
1 jalapeno pepper, minced
2 1/2 tablespoons lemon juice
2 tablespoons lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup cilantro, chopped

Steps:

  • Combine onion, mango, tomato, pepper, lemon juice, salt, and pepper in bowl. Toss to coat and let stand 2-3 hours. Stir in cilantro just before serving.
