A sweet departure, indeed! This is a great addition to any summer meal. The recipe doesn't make a whole lot of dressing, so I would recommend at least doubling it... it's that good.

Time 30m

Number Of Ingredients 13

1 c sliced almonds
4 Tbsp sugar
3 bunch romaine lettuce head
2 green onions
1 c celery, sliced
1 can(s) mandarin oranges, drained
DRESSING
1/2 tsp salt
dash pepper
1/4 c vegetable oil
2 Tbsp vinegar
2 Tbsp sugar
1 Tbsp parsley, chopped

Steps:

  • 1. Mix all dressing ingredients together and chill in refrigerator. In small pan over medium heat cook almonds and sugar, stirring constantly, until almonds are coated and sugar is dissolved. Watch carefully as they burn easily! The almonds should be just a little brown.
  • 2. Mix lettuce, celery and onion. Just before serving, add oranges and almonds. Toss with dressing.

I've never made a salad with mandarins before, but this one was a real winner. I'll definitely be making it again.

I'm allergic to nuts, so I omitted the almonds from this salad. It was still delicious.

I'm not a big fan of goat cheese, so I substituted feta instead. It was still delicious!
