MANDARIN PASTA SALAD image

This is a salad which can be used as a main dish as it contains chicken, spinach, vegetables and fruit. It is soooo tasty and a cool dish for a hot summer's night.

8 oz bow tie pasta
1/2 large cucumber
1/2 c diced red bell pepper
1/2 c coarsely chopped red onion
1 pkg 6oz. fresh baby spinach leaves
1 can(s) 11 oz. mandarin orange segments, drained
2 c diced cooked chicken
1/2 c sliced almonds, toasted
1 tsp finely chopped, peeled fresh ginger root
1 clove pressed garlic
1/3 c rice vinegar or white wine vinegar
1/4 c orange juice, fresh
1/4 c vegetable oil
1 tsp sesame oil
1 pkg lipton onion soup mix (envelope)
2 tsp white sugar

Steps:

  • 1. Start with the dressing. Finely chop gingeroot . In small bowl, whisk gingerroot, garlic, vinegar, orange juice, vegetable oil, sesame oil, soup mix & sugar. Cover, refrigerate until ready to use.
  • 2. For salad, cook pasta according to package, drain and rinse under cold running water. Place pasta in large bowl. Meanwhile score cucumber with a fork, remove seeds using a corer, slice cuke and cut slices in half. Dice bell pepper, coarsely chop onion. Add cuke, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta. Pour dressing over salad and toss. Serve immediately.
