Low Fat Pancakes image

This a low fat pancake recipe with a little bit of a healthy kick to it. This recipe is for quite a large batch, so half it if you are not cooking for a large group. I make this in a large batch and freeze it for an easy and quick breakfast. The flavoured yogurt that I use is Yoplait Delicieux, Strawberry with Chocolate Flakes (yummm!).

I've tried several low-fat pancake recipes, and this one is definitely the best. The pancakes were light and fluffy, and they didn't have that weird aftertaste that some low-fat foods have.

These pancakes were a bit bland for my taste. I think I'll add some vanilla extract or cinnamon next time.

I'm not sure what I did wrong, but my pancakes didn't turn out at all. They were more like hockey pucks than pancakes.
