Low Fat Banana Nut Bread Recipe - (4.3/5) image

Number Of Ingredients 10

1 1/2 cups flour
1/8 cup egg beaters
1/2 cup light corn syrup
1/2 cup sugar (1/2 to 1 cup)
1 cup bananas mashed
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup 1% low-fat buttermilk
1 cup grape-nuts

Steps:

  • Mix all ingredients; bake in a large sprayed loaf pan at 350°F for 50 to 60 minutes. Do not over-bake, test for doneness with a toothpick. I'm going to add 1 cup drained crushed pineapple and see if it works.
