Time 30m

Number Of Ingredients 7

2 c carbquik
2 1.2 Tbsp cinnamon
1 c splenda
1 Tbsp vanilla extract
2 Tbsp splenda brown sugar blend
1/2 stick butter, not melted
1 c heavy cream

Steps:

  • 1. Preheat oven to 350. Grease muffin tin or use cupcake liners.
  • 2. Blend all dry ingredients together. Add vanilla and stir. Using your fingers to pinch in the butter or a pastry cutter to cut the butter into small pieces, cut the butter throughout the dry ingredients. Add cream to make a sticky dough
  • 3. Put dough in muffin tins. I make 9 muffins and fill each one all the way to the top and bake 20 minutes. If you fill the tins 3/4 of the way full, it will make 12 muffins so just adjust your baking time to 15 minutes. Your oven temperature may vary your baking time.

These muffins freeze really well, so they're a great option for meal prep. I like to make a batch on the weekend and then freeze them for later.

These muffins are a great way to use up leftover almond flour. I always have some on hand, so it's nice to have a recipe that uses it up.

I'm not a huge fan of almond flour, but I was pleasantly surprised by how good these muffins were. The almond flour gives them a nice nutty flavor.

These muffins are a bit denser than traditional muffins, but they're still very moist and flavorful. I think they're the perfect balance.

I made these muffins with a few substitutions, and they still turned out great! I used coconut oil instead of butter, and I added a handful of chopped walnuts.
