LORI'S RED PEPPER JELLY image

Yield 7 small jars

Number Of Ingredients 6

1 cup white vinegar
2 cups finely chopped red pepper (3-4 large)As an alternative replace 1/4 - 1/2 cup chopped red pepper with the same amount of finely chopped jalapeno or other hot pepper
5-5 1/2 cups white sugar
1/2 cup lemon juice
dried chili flakes (optional)
1 cup liquid Certo(1 box-2pkgs)

Steps:

  • Chop peppers finely by hand or in a food processor. Add sugar and vinegar. At this point you can add dried chili flakes to suit your taste (I usually add at least 1 tsp). Bring to a boil and boil for 3-8mins. Add lemon juice and boil for 4mins. Stir constantly to avoid burning or sticking. Remove from heat, add Certo. Bottle and store.
