Lolly's White Chicken Chili image

This soup was a favorite at an out of business restaurant. My family thought it tasted even better....

4 skinless boneless chicken breast
1-2 medium white potatoes, peeled & chopped
1-2 medium yellow onions, chopped
4 stalk(s) celery, chopped
2 clove garlic, minced
1 Tbsp vegetable oil
2 can(s) chicken broth or chicken base & water to equal
2 can(s) navy beans drained & rinsed
1 can(s) navy beans drained, rinsed & pureed
1-2 can(s) 4.5 chopped green chilies, undrained
1 tsp ground cumin
3/4 tsp dried oregano
1/2 tsp chili powder
1/2 tsp ground black pepper
1/8 tsp ground red pepper (cayenne)
red pepper flakes to taste
sour cream, chopped fresh cilantro or chopped green onions (scallions)
DIRECTIONS
COOK CHICKEN OR USE DELI COOKED CHICKEN. SHRED OR CHOP INTO BITE SIZE PIECES.

Steps:

  • 1. Shred or Chop cooked Chicken into bite size pieces. Set aside.
  • 2. Saute' Onion, Celery, Potato & Garlic in oil, add Chicken.
  • 3. Stir in broth & rest of ingredients; bring to boil. Reduce heat and simmer uncovered 30 minutes. Stir occasionally. Serve with desired toppings. Makes approx. 15 cups.
  • 4. Enjoy... with topping of Sour Cream, chopped fresh Cilantro or chopped Green Onions and Fresh Cuban Bread or French Loaf or French Bread.... Salud and Happy Days... Lolly
