Time 50m

Yield 6

Number Of Ingredients 8

¼ cup butter
½ onion, minced
3 cloves garlic, or more to taste, minced
1 ½ pounds potatoes, or more to taste, peeled and diced
4 cups chicken stock
1 cup milk
salt and ground black pepper to taste
1 cup shredded Muenster cheese

Steps:

  • Melt butter in a large pot over medium heat. Cook and stir onion and garlic in hot butter until onion is translucent, 5 to 7 minutes.
  • Stir potatoes, chicken stock, and milk with the onion mixture; season with salt and pepper. Bring the liquid to a boil, reduce heat to low, and cook at a simmer until potatoes are tender and falling apart, 30 to 45 minutes.
  • Mash potatoes lightly to help thicken the soup, while keeping some chunks in the soup. Remove pot from heat and stir cheese into the soup to melt.

I'm allergic to dairy, so I made this recipe with almond milk and vegan cheese. It turned out great!

I've tried this recipe twice now and both times it's been a disaster. The first time the locro was burnt and the second time it was undercooked.

I followed the recipe exactly, but my locro turned out bland and watery. I'm not sure what went wrong.

I'm not a big fan of locro, but this recipe was actually pretty good. The flavors were well-balanced and the stew wasn't too heavy.

This recipe is a great way to use up leftover chicken. I made it with some leftover rotisserie chicken and it was delicious. The stew is also very versatile and can be made with different types of vegetables.

This locro recipe is a delicious and hearty dish that is perfect for a cold winter day. The flavors are rich and complex, and the stew is very filling. I especially enjoyed the addition of the avocado and cheese, which added a creamy and tangy flavor
