LOBSTER PIZZA image

Number Of Ingredients 15

1 pre-cooked 1 - 1 1/4 lb. lobster, shelled and cut into bite-sized chunks
1 pizza shell of your choice (Boboli, fresh dough, whatever)
olive oil
1 small can Hunt's tomato sauce
1 bunch chopped fresh cilantro
1/2 an onion and 1/2 a red bell pepper, chopped
2 oz. plain goat cheese
about 1/2 c. Special Sauce (see below)
1/4 - 1/3 c. shredded Romano cheese
for Special Sauce:
1/4 c. chicken stock
1/3 c. good quality mayonnaise
1/2 tsp. crushed saffron (a mortar and pestle works fine)
2 T. lemon juice
1/4 tsp. salt

Steps:

  • Pre-crisp the pizza shell for 15 min. in a 425 oven. Make Special Sauce: Combine all ingredients and taste. (It will be REALLY lemony but that's desirable.) Add more of any of the ingredients as your palate demands. Set aside. Sauté red bell pepper and onion together in 2 T. olive oil until partially caramelized. Set aside. Build the pizza: Brush the shell with a tablespoon or two of olive oil, then drizzle tomato sauce over all. Bring sauce up to the very edge of the shell. Strew cilantro, then the onion-pepper mixture; then place the lobster chunks strategically over the shell. Now salt everything generously. Next, crumble the goat cheese as best you can over everything. Drizzle the Special Sauce over the pizza, then scatter the Romano over everything last. Place back into a 400 oven for another 15-20 minutes.
