Little Reuben Appetizers image

These are so nice to serve for St. Patrick's Day. They are simple to make and everyone seems to love them. A friend gave me this recipe last year and I make them whenever I need to take an appetizer to a dinner.

Time 30m

Number Of Ingredients 5

1 pkg appetizer size deli rye bread
1 c prepared thousand island salad dressing
1/2 lb deli style corned beef, sliced thin
1 pkg sauerkraut, from deli or canned, well drained
1/2 lb thinly sliced swiss cheese

Steps:

  • 1. Preheat oven to 350 degrees. Separate bread slices and spread out on an ungreased cookie sheet.
  • 2. Prepare each bread slice by first spreading with Thousand Island dressing, next place a slice or two of corned beef on top of bread, top with a tablespoon of sauerkraut, finally place a square of Swiss cheese on top of everything.
  • 3. Bake for 10 to 12 minutes or until cheese is melted and bubbly. Serve warm from the oven.

I followed the recipe exactly and the appetizers turned out great. The only thing I would change is to use a thicker slice of rye bread.

These appetizers were a little too salty for my taste, but I think that's just because I used a store-bought corned beef. Next time I'll try making my own.

I'm not a big fan of sauerkraut, but I loved these appetizers. The sauerkraut was mild and didn't overpower the other flavors.

These appetizers were delicious! The rye bread was crispy, the corned beef was tender, and the sauerkraut and Swiss cheese added a nice tang.

I made these appetizers for a party and they were a big hit. The only problem was that they were so good that they disappeared quickly!
