LINGUINE WITH TUNA, OLIVES, AND CAPERS image

Yield 4 - 6 servings

Number Of Ingredients 9

500 g Linguine
1/2 c black olives, pitted and finely chopped
1 can tuna fish, shredded
1 1/4 T chopped capers
2 cloves crushed garlic
1 T chopped parsley
1/4 c extra virgin olive oil
salt & pepper
Grated parmesan (optional)

Steps:

  • Cook linguine as per package instructions. Make sauce while pasta is cooking. Lightly saute the crushed garlic with the capers and olives in oil. DON'T BROWN. Add a few tablespoons of the boiling pasta water and add chopped parsley, salt and fresh ground pepper. Let cook a few minutes. Remove from heat and add tuna. Drain pasta, toss with sauce, and serve with parmesan.
