Linguine With Eggplant image

A very simple recipe. This smells so good cooking. And tastes just as good as it smells. I found this gem online while trying to figure out what to do with fresh eggplant from the garden.

This dish was a disaster! The eggplant was burnt and the sauce was way too salty. I'm not sure what went wrong.

I thought this recipe was just okay. The eggplant was a bit tough and the sauce was a bit bland. I think I'll try a different recipe next time.

This recipe was a bit too oily for my taste. I think I'll try baking the eggplant next time instead of frying it.

Not bad! The eggplant was a bit bland, but the sauce was very flavorful. I think next time I'll add some more spices to the eggplant.

This linguine with eggplant recipe was a hit with my family! The eggplant was tender and flavorful, and the sauce was rich and creamy. I will definitely be making this again.
