LIME COTTAGE CHEESE SALAD image

Number Of Ingredients 6

1 (6 oz.) pkg. Lime Jell-O Flavored Gelatin
2 cups boiling water
1/2 cup cold water
1 (8 oz.) tub Cool Whip
1 (12 oz.) container, small curd cottage cheese
1 (8-1/4 oz.) can crushed pineapple, drained

Steps:

  • In a large bowl, mix the lime gelatin in boiling water. Add the cold water; stir. Chill until almost set (about 40 minutes). Beat with an electric mixer until foamy. Fold in the Cool Whip. Stir in the cottage cheese; then pineapple. Pour into a 13x9x2-inch pan. Refrigerate several hours. Cut into 12-15 squares.
