Lightened peachy french toast bake image

I love french toast bakes, but not all the fat and calories, so I lightened it up a bit w/ egg beaters egg substitute and fat free milk. It tastes jsut as good to me as the full fat recipe.

1/4 c egg beaters
1/2 c fat free milk
4 slice whole wheat bread, cubed
2 ripe peaches, pared, cored, diced
3 Tbsp flour
2 Tbsp dark brown sugar
2 tsp butter
1 dash(es) cinnamon

Steps:

  • 1. Heat oven to 350. Lightly spray 2 loaf pans w/ cooking spray. In bowl, beat egg beaters, milk, 1-1/3 tbsp brown sugar and 1 tsp cinnamon.
  • 2. Add bread and peaches, gently stir and let sit 2 mins. In another bowl, combine flour, remaining brown sugar, butter and a dash of cinnamon. Divide the bread mix evenly between 2 pans.
  • 3. Sprinkle each w/ flour mix. Bake 35 mins, or until golden brown.

I'm not sure what I did wrong, but my French toast turned out dry and overcooked. I'm going to try it again with a different recipe.
