Lemony Salmon Patties image

This is a favorite of my husband, son and nephew (who is a picky eater).

Number Of Ingredients 16

1 can(s) pink salmon
3/4 c milk
1 c soft bread crumps
1 egg, lightly beaten
1 Tbsp fresh diced parsley
1 tsp minced onion
1/2 tsp worcestershire sauce
1/4 tsp old bay seasoning
1/4 tsp pepper
LEMON SAUCE
2 Tbsp butter
4 tsp butter
3/4 c milk
2 Tbsp lemon juice
1/4 tsp salt
1/8-1/4 tsp cayenne pepper

Steps:

  • 1. In a large bowl, combine the first nine ingredients. Fill eight greased muffin cups with 1/4 cup salmon mixture. Bake at 350° for 45 minutes or until browned.
  • 2. Meanwhile, melt butter in a saucepan; stir in flour until smooth. Gradually stir in milk; bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the lemon juice, salt and cayenne. Serve with patties.
  • 3. I also make into patties and cook on indoor grill. After making patties spray each side before grilling. About 7-10 minutes. Serving as sandwich with lettuce and tomato.
  • 4. Remember to adjust to your taste.

Not recommended. The patties were dry and overcooked. The lemony-salmon mixture was also a bit too tangy for my taste.
