LEMON YOGURT BARS image

1 1/2 C FLOUR
1/2 C MARGARINE
1/3 C BROWN SUGAR
1/4 C HONEY
1 C LEMON YOGURT
2 LG EGGS
1/2 TSP VANILLA

Steps:

  • WITH PASTRY BLENDER, BLEND FLOUR, BROWN SUGAR AND MARGARINE INTO CRUMBS. RESERVES 1 CUP OF CRUMBS AND PRESS THE REMAINING MIXTURE INTO AN 8X8 BAKING PAN MAKING A 1/2" SIDE. BAKE AT 350 FOR ABOUT 15 MINUTES UNTIL GOLDEN. STIR TOGETHER HONEY, YOGURT, EGGS AND VANILLA UNTIL SMOOTH. POUR INTO BAKED CRUST AND TOP WITH REMAINING CRUMBS. RETURN TO OVEN AND BAKE FOR ANOTHER 20 MINUTES OR UNTIL SET. COOL AND CUT INTO SQUARES. STORE IN REFRIGERATOR
