Lemon Mochi Cake image

I wanted to use my mochiko flour and found this recipe online from the Honolulu advisor. I tweaked it by adding less sugar and skipping the coconut and it turned out so well. It's like mochi but more cake-y or like a cake but chewy. Definitely will make again! Tastes even better the next day.

I was really excited to try this recipe, but I was disappointed with the results. The cake was dry and crumbly, and the lemon flavor was barely noticeable. I think I'll try a different recipe next time.

This cake was a bit too dense for my taste, but the flavor was still good. I think I might try using a different mochi flour next time to see if that makes a difference.
