Lemon Garlic Baked Cod image

This is a great way to cook fish, especially if you are skeptical or nervous about having to flip fish in a pan. No need to flip this one! This recipe is also posted on my personal blog foodyschmoodyblog.com where you can find more easy to make family recipes.

Number Of Ingredients 10

2 lb cod fillets
1/2 c sour cream
1 tsp lemon zest
1 tsp minced garlic
1 Tbsp chopped parsley, fresh
1/2 tsp salt
1/4 tsp black pepper
OPTION TOPPING INGREDIENTS:
1 Tbsp butter, melted
1/4 c seasoned panko crumbs

Steps:

  • 1. Preheat oven to 425 F.
  • 2. In a bowl stir together sour cream, zest, garlic, parsley, salt and pepper. Spread the mixture over the cod fillets. Place fillets on a baking sheet, lined with parchment paper.
  • 3. If panko topping is desired, stir together the panko and butter and press on the tops of fillets.
  • 4. Bake 425 for 10-12 minutes.
