Lemon and Cilantro Couscous image

This simple couscous is a perfect side for a tagine. if you don't like the flavor of cilantro, try using fresh mint or parsley.

2 Tbsp olive oil
2 clove garlic, peeled and minced
1/2 tsp ground turmeric
1 2/3 c chicken broth
1 tsp grated lemon zest
1/2 tsp salt
1 1/2 c dry couscous
1/4 c chopped fresh cilantro
2 Tbsp fresh lemon juice
salt and pepper, to taste

Steps:

  • 1. Heat oil in medium saucepan over medium-high heat. Add garlic and turmeric; stir 1 minute.
  • 2. Add broth, lemon zest, and coarse salt; bring to boil.
  • 3. Remove pan from heat. Stir in couscous. Cover; let stand until liquid is absorbed, about 5 minutes.
  • 4. Fluff with fork; mix in cilantro and lemon juice. Season with salt and pepper, if desired.
