Lazy Man's Cobbler image

My mother-in-law, Stella Curry, taught me so much about cooking. My own mother, Virgie Osborne, was a great cook too. I have always had some big shoes to fill. Mrs.Curry had 16 children so she needed some quick recipes. Here goes!

1 stick butter or margarine
1 c self rising flour
1 c granulated sugar
1 c evaporated milk
1 can(s) fruit pie filling or large can peaches, drained

Steps:

  • 1. Preheat oven to 350. Spray a 9x13 pan with nonstick spray. Place one stick of margarine or butter in pan and place in oven until melted.
  • 2. In large bowl whisk together flour, sugar and milk into a smooth, thin batter. Remove pan from oven and pour batter into melted margarine/butter.
  • 3. Stir fruit pie filling or canned peaches into batter. Bake 35-45 minutes until top in golden brown. Serve warm with ice cream, whipped cream or cold milk. Then go back for seconds, thirds, whatever.
